Not much information on the search, but how large can i go on the stock 16" rim.... as we know its 225/60/16 stock, how about 245/70/16? possible? or will it rub... i know bigger will throw the speedo off slightly, but the stock tires are too small for the vehicle and i would also like to have a more flush appearance, stock the tires tuck into the body a bit

I dont think you should go to a 245 wide tire, not that it wont fit, but it will bulge the sidewall out alot.
As for going up in aspect ratio from a 60 to a 70, now your just asking for trouble... If you just must have those wide 245's then step down in sidewall to 50, or maybe even 45's. The lower aspect ration of the tire will help to drop any gearing change that you have added by going wider. (you have to think of tires on both levels, and compromise in each to find a match)
Me, I would go with 235/50/16s, or maybe 235/55/16s

Stock is 215/70/16 on a 6.5jj x 16 rim. The widest option you can go to without having to get a wider rim is 235/65/16. This tyre will also keep the aspect ratio the same so your speedo will remain within the guidelines ie. (when your speedo reads 70mph your actual speed will be 70.45mph, your overall tyre circumference will increase by only 0.64%).

215/70r16

215mm is width of tire
70 is the % of width that is the section height of the tire... road to rim, in this case 150mm
16 is your wheel/rim

i'ld say max height of wheel is a 215/85r16, giving you a nice 1" lift... Firestone Destination M/T's or Bridgestone All Terrain T/A if you wanna go a little smaller on the diameter
