When I go to lift the latch to release the fuel door or to open the trunk they both don't do anything. So I'm thinking I need new release cables but I have no idea where to find them online or locally. Or how to go about actually fixing the problem for that matter. Any input on the matter would be awesome.

Do either latches have any tension on them? Besides the spring that is. Or do both just freely move up and down? If you do have cable tension, then....Some hatches have a lock feature on them. There may be a small lever on the hatch that engages or disengages the cable. The fuel door may have a bad ejection spring or whatever the Mirages use to pop the fuel door out.
