Has anyone installed foglights into a 07 LS? If so what is involved in doing so?

I know for sure you need to change the stalk. Not sure if you can only take the skid plate out or you need to take out the whole bumper, but it' something to consider.
I has mine installed by the dealer before delivery. If it's not urgent, I can ask the next service.

Steering column stalk needs change for sure, there's a switch for the fog lights. Some ECU programming may be required with the dealer's tool, not sure. Refer to a page 3-198 in the manual. BTW Suzuki XL7 has very similar fogs , but the mounting could be different. I believe there's a way to make this work with external two push button switch. I just need to study some wiring diagrams to confirm.
