I'm looking to keep my factory reciever in my 2001 Eclipse, but am considering replacing the speakers with some inexpensive aftermarket speakers (lower level blaupunkt's or pioneer) With an Infinity system, will this work, or does the system use a radically different kind of speaker or different ohm, etc...?

And so I don't get too many suggestions to replace the head-unit, I enjoy the stock look, and live in a higher crime area, so I don't want to risk loosing another expensive stereo to theft.

But also with the head unit, I was looking to replace my CD only reciever, with a tape/cd(changer) stock reciever. will all the appropriate wires exist for this switch? And do these radios ALWAYS have lock codes? I've replaced other factory stereos that only had codes if the owner programmed it as such...

There are some default codes you can get from the Mitsubishi dealership if you have the vin that matches the unit and correct information (title, liscense number, registration) basically all forms that prove ownership.
